A View of My Plate

to crea
te my cauliflower au gratin.

These two photos of green on plates may not look the most exciting but they are actually where beauty begins. These are my little concoctions of vegetable plus.
When vegetable servings are in place I feel prepared--prepared for the day. 

So with that begins beauty.


 I prepared asparagus (the frozen bag kind from Kroger) and mixed fresh rosemary and parsley with one-fourth cup of low-fat ricotta cheese.


This vegetable experiment took carrots and shallots with nutmeg and ginger. I feel pretty much ready to meet the day if vegetables are in place. I try to have five servings. This may sound too much, overwhelming, but it is the secret --Many vegetables out front and then smaller portions of those items that seem, at times, forbidden. They're not. I just arrange the eating pattern so that the stuff the body longs for comes toward the end of the meal.
